Inaugural Talk: Welcome to Galicia
Pepe Solla, Chef
Pepe Solla grew up among the stoves of the family restaurant Casa Solla in Poio (Pontevedra), opened by his parents in 1961. His first steps in the business were in the dining room, as a sommelier, a role in which he stood out as a co-founder of the Galician Sommeliers Association and also as winner of the Galician Championship.
Over time, and to broaden his vision of the business, he moved to the kitchen and trained in pastry-making with Cristian Felder in Paris and at elBulli alongside Ferran Adrià. In 1999 he took over the gastronomic direction of Casa Solla and in 2003 became its owner. Pepe is one of the great promoters of the new Galician cuisine and a founding member of the chefs' collective Grupo NOVE.
Throughout his career he has consolidated a proposal based on quality products, honesty and Galician roots, maintaining the MICHELIN Star that the restaurant has held since 1980. At the same time, he has driven the evolution of Casa Solla until it became a benchmark restaurant in Spain, which in 2014 became the first establishment in Galicia to achieve 3 Repsol Suns.
